Orange and Mint Salad

How often have you needed to feed yourself in 10 minutes (because you had to be at work 5 minutes ago or have 10 minutes to reach the movie hall where all your friends are already waiting) and discovered that there is absolutely NOTHING in the fridge? It happens to me very often. This salad happened on one such day, with about 4-5 things, in 5 minutes and for one person. I managed to click some (rubbish) photos, only because I had left my camera in the kitchen on top of the oven (I swear I’ll never do that again!).

You will need:

  •       Iceberg lettuce: ½ head
  •       Cucumber: 1
  •       Orange: 1
  •       Mint leaves: 8-10
  •       Orange juice: 3 tablespoons (preferably fresh)
  •       Extra virgin olive oil: 2 tablespoons
  •       White/black pepper: to taste
  •       Salt: to taste

Chop the lettuce, slice the cucumber and segment the orange, carefully removing the seeds and put them in a salad bowl.

Finely chop the fresh mint leaves and keep aside.

In a small bowl, whisk together the orange juice, olive oil, chopped mint, salt and pepper for 30 seconds.

Drizzle the dressing over the salad.

Serves one.
